Recipe: Cannabis Caramel-Stuffed Banana Bread Muffins


Imagine this - it’s a lazy morning on your day off in early Fall, and you’re feeling like a little edible treat to start your day. You want something sweet, with some spicy flavor, that’s super easy to infuse. Added bonus if you get some amazing textures going on. It sounds incredible, and now it can be a reality - just make these light and moist Cannabis Caramel-Filled Banana Bread Muffins, taking the sweet banana flavor of a classic breakfast food to the next level with a melty cannabis-infused caramel center!

Since banana bread muffins are such a perfect grab-and-go breakfast, we infused the buttercream and filled the center of these muffins with our Active 50mg THC cannabis caramel variety (available at retailers across Oregon), made with Shadowbox Farms Blue Dream strain-specific Canna-Butter and Limonene and a-Pinene terpenes, for an energizing and uplifting cannabis experience to start your day off on the highest note possible :)

This recipe will make 10 muffins with a THC dose of 5mg each, so you can eat a full muffin for a light morning dose to kick off your day in flow state, cut the butter in the batter with canna-butter to increase the THC doses, or you can start with half a muffin as a perfect dose for first-timers. When in doubt on dosing, as with all edibles, start low and go slow on consuming to avoid accidental over-consumption, and if you do find yourself feeling the effects of a THC over-consumption, use the tactics in our blog post to help yourself feel better.

1/4 cup unsalted butter, softened
3/4 cup light brown sugar, firmly packed
1 large egg, beaten
1/2 tsp vanilla extract
1/8 tsp cinnamon
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1-1/4 cup mashed overripe bananas (about 3 small bananas)
1 Periodic edibles Active Cannabis Caramel, cut into 5 mg doses

  1. Pre-heat oven to 350 degrees F. Thoroughly grease a full-sized muffin tin and set aside.

  2. In a large mixing bowl, combine flour, baking soda, cinnamon, and salt thoroughly before setting aside. In the bowl of a stand mixer, cream together butter and brown sugar until smooth. Stir in eggs and vanila before adding mashed banana and stirring until just combined - the mixture will be chunky.

  3. Manually stir the banana wet mixture into the dry mixture in one addition as minimally as possible, just until the flour is completely gone - do not over-mix once at this stage to avoid overly dense muffins. Fill the muffin tins about half way full until you get 10 muffins, and bake 30 to 40 minutes, until browned evenly and a toothpick to the center comes out clean.

  4. While muffins cook, dose your Periodic edibles Cannabis Caramels out into 5mg doses using the scoring guide on the back of the caramel label. Roll each dose into a tight ball and set aside until muffins are done.

  5. Once baked, remove muffins from the oven and immediately begin filling with caramel - using a butter knife in a twisting motion, create a small cavity in a muffin and place a 5mg dose of cannabis caramel into the warm center. Re-cover the hole created with muffin as best as you can. Place muffins back in oven for 2-3 minutes to melt the caramel if necessary. Allow muffins to cool completely before serving.
