Recipe: Canna-Caramel Banana Pudding
Here’s a beloved summer dessert classic, taken to the next level! If you love caramel and banana pudding, you’ll definitely want to try this Canna-Caramel Banana Pudding, enhanced with our Summer Seasonal Orange Vanilla cannabis caramels (available at select retailers across Oregon for a limited time only), and our original Active caramel - both of which add Limonene and Pinene terpenes for an uplifting cannabis experience with a delightfully fresh flavor!
This recipe will make about 12 servings of banana pudding, and dosage will vary depending on how many Periodic edibles Cannabis Caramels you melt into your caramel sauce - we used 4 cannabis caramels in our recipe for an approximate dosage of 16mg THC per serving, but you can use 3 caramels to reduce the dosage without losing the nice and light terpene flavor. However, it is important to note that getting an exact dosage from this recipe will be tricky, so this edible is best for experienced cannabis edible consumers who are less concerned about exact dosage and are more tolerant of edible THC doses in the 15-30mg range based on past experience. When in doubt, as with all edibles, start low and go slow on consuming to avoid overconsumption.
1-1/3 cup milk
1 package instant vanilla pudding
1 can (14oz.) sweetened condensed milk
3 cup heavy cream
1/4 cup powdered sugar
1 tsp vanilla extract
1 box vanilla wafer cookies
4 bananas, sliced into coins
2 1/3 cup caramel sauce
3-4 Periodic edibles Cannabis Caramels - we used 2 each of our Seasonal Orange Vanilla and Original Active varieties
In a large bowl, combine milk, vanilla pudding mix, and sweetened condensed milk. Whisk thoroughly until smooth and free of lumps. Refrigerate for at least 5 minutes or until set.
Prepare the infused caramel sauce - over a gentle double-boiler, melt all of the Periodic edibles cannabis caramels until smooth. Add a few tablespoons of the non-infused caramel sauce to the double-boiler and mix thoroughly to incorporate the cannabis caramel compounds - look out for chunks of unmelted Periodic caramels during stirring and be sure to break them up. Once the partial caramel mixture is incorporated completely, add it to the rest of the non-infused caramel sauce and stir thoroughly until completely mixed. If necessary, place the entire caramel sauce into a glass bowl to set over the double-boiler to ensure complete mixing. Set aside to cool. Reserve a few tablespoons of caramel sauce for final topping.
In a large mixer bowl, combine heavy cream, powdered sugar, and vanilla. Beat on medium-high until stiff peaks form, 2 to 3 minutes. Set aside half of the whipped cream for topping the pudding. Gently fold the remaining half of the whipped cream, along with 1/3 cup of the infused caramel mix, into the set pudding mixture.
Cover the bottom and sides of a 9”x13” casserole dish - or a 3 quart trifle dish, if you want to be fancy :) - with a layer of vanilla wafers. Pour 1/3 of the pudding mixture over the wafers and spread evenly. Add a layer of banana slices over the pudding, then a thin layer of caramel. Continue layering pudding, bananas, and caramel sauce until all are used up - if using a trifle dish, you can add additional layers of vanilla wafers as well. Top with whipped cream, caramel sauce, and crushed up vanilla wafers. For best results, serve immediately.
