Recipe: Canna-Caramel Freckled Sugar Cookies

Sugar cookies are such a simple sweet treat, filled with nostalgia for many of us whose grandmothers were frequent at-home bakers. With just a few ingredients that you likely already have at home, you can whip together a batch of these tried-and-true dessert favorites. We decided to pay homage to this American classic the Periodic way - by bringing caramel and cannabinoids to the party!

We call our sugar cookies “freckled” thanks to the hearty pinch of cinnamon flecking the cookies, as well as the small chunks of our Relax Cannabis Caramels scattered throughout the soft cookie center. Our Relax caramel variety (available at retailers across Oregon) is made with Oregon Roots Purple Widow strain-specific canna-butter and Myrcene and Linalool terpenes - making these the perfect edible to enjoy during a movie marathon, as a midnight snack to fight sleep difficulties, or for any time you need to take the edge off and chill out.

This recipe will make 20 sugar cookies with a THC dose of 5mg each, so you can enjoy several cookies if your edible THC tolerance is moderate-to-high, or substitute the Crisco in the recipe with your own homemade canna-butter to increase the dosage per cookie if you’re looking for stronger edibles. If you’re completely new to edibles, start with half a cookie and see how you feel before consuming more. When in doubt on dosing, as with all edibles, start low and go slow on consuming to avoid accidental over-consumption, and if you do find yourself feeling the effects of a THC over-consumption, use the tactics in our blog post to help yourself feel better.

Ingredients

2-1/2 cups flour
1/4 tsp salt
2 tsp baking powder
1/2 tsp cinnamon
1/2 cup Crisco vegetable shortening
1 cup sugar
2 eggs, beaten
1/2 tsp vanilla extract
1 tbsp whole milk
2 Periodic edibles Relax Cannabis Caramels

Directions

  1. Pre-heat oven to 350 degrees F. It’s very important that you do not heat the cookies above the boiling point of the THC and other active ingredients in your cannabis caramels. Line 2 baking sheets with parchment paper and set aside.

  2. In a large mixing bowl, cream together the vegetable shortening, sugar, vanilla, milk, and eggs. In a separate mixing bowl, whish together the dry ingredients. Sift the dry ingredients into the wet ingredients in several small additions, mixing until just combined after each addition. Place dough ball in the fridge, covered, to chill while you prepare the caramel pieces

  3. Using the dosing guide on the back of your Periodic edibles cannabis caramels, dose the caramel out into 5mg THC pieces. Separate each dose to give yourself room to chop the 5mg segment into smaller chunks for use in the cookies - this will help you to maintain a 5mg per cookie dose.

  4. Once the caramel bits and dough are ready, roll the dough out onto a heavily floured work surface until it is evenly 1/2” thick across the dough. Using a floured cookie cutter or rounded cup, cut out the sugar cookies and place them onto the baking sheets.

  5. Sprinkle a 5mg portion of caramel pieces evenly across the center of a sugar cookie, leaving a good margin around the edge and wrapping over to completely encase the caramel bits in a dough ball - you’re aiming for small chunks of caramel scattered throughout the cookie rather than a glob of caramel in the center (not that that’s a bad thing!). Repeat for all cookies until caramel is used up - you will have extra cookie dough left over, great for non-infused treats during the day or frozen for later use!

  6. Bake the cookies in the preheated oven until just lightly golden brown on the edges, about 12-14 minutes. Remove the baking sheet from the oven and allow the cookies to cool slightly before serving immediately, with cold milk for best results. You can also ice your non-infused cookies for a fun project!
