Recipe: Ginger Cookies with Canna-Caramel Filling

Are you totally over Summer? Counting down the days until you can start decorating for the Fall and Winter Holidays? If you said yes, then today’s recipe should be right up your alley - Ginger Cookies with a melty caramel center, made into at-home edibles the easy way! These spicy sweets are infused with our Balance 50mg THC cannabis caramel variety (available at retailers across Oregon), made with Dogwalker strain-specific Canna-Butter and Limonene and Terpinolene terpenes, for a flexible cannabis experience that works night or day, no matter what you have planned!

This recipe will make 20 cookies with a THC dose of 5mg each, so you can eat several cookies if you have a moderate-to-high tolerance to edibles, or you can start with half a cookie as a perfect dose for first-timers. If you’re only using 1 Periodic edibles caramel, use non-infused caramel candies to round out the batch - just be sure to clearly mark which cookies are infused and which are not! When in doubt on dosing, as with all edibles, start low and go slow on consuming to avoid accidental over-consumption, and if you do find yourself feeling the effects of a THC over-consumption, use the tactics in our blog post to help yourself feel better.

Ingredients

3/4 cup packed dark brown sugar
1/4 cup plus 1 tbsp salted butter, softened
1 large egg
1/2 tsp vanilla extract
1-1/2 cup all-purpose flour
1/8 cup chopped crystallized ginger
1 tsp baking powder
1/2 tsp salt
1/4 cup Demerara sugar
2 Periodic edibles Balance Cannabis Caramels

Directions

  1. In the bowl of a stand mixer, beat together brown sugar, softened butter, egg, and vanilla on medium until smooth.

  2. In a food processor, finely process pre-chopped crystallized ginger for a minute before adding flour, baking powder, and salt. Process mixture until well blended, about 1-2 minutes. Ginger chunks should be small and hard to discern in flour. Gradually add processed flour mixture to sugar mixture in bowl of stand mixer, beating on low between each addition to just combine. Shape combined dough ball into a disk before wrapping with plastic wrap, and chill in the fridge for at least 4 hours, up to 24 hours.

  3. When ready to bake, pre-heat oven to 300 degrees F - be sure to confirm that the temperature of your oven does not exceed 325 maximum to avoid burning off active cannabis compounds during cooking.

  4. Using the dosing guide on the back of the Periodic edibles cannabis caramel, pre-score each marked line to create scores for 10 pieces of caramel with a THC dose of 5mg each. If caramel is soft, place in fridge for 5 minutes before unwrapping to complete cuts through caramel. Roll each caramel piece into a small ball to create the caramel centers for the cookies. Store in freezer while preparing the baking sheets and dough.

  5. Line 2 baking sheets with parchment paper. Shape dough disk into 20 evenly-sized dough balls. Flatten each ball out in the palm of your hand, and place a ball of caramel into the center. Re-form the dough ball around the caramel, making sure to completely seal the ball of any seams to prevent caramel leakage during baking. Roll each sealed dough ball in Demerara sugar for texture before placing on baking sheet. Chill in fridge until ready to bake.

  6. Once oven is pre-heated, bake cookies for about 15-20 minutes, until slightly flattened and lightly browned on bottom. Begin baking on top rack of oven, and move to bottom rack half way through baking time, turning sheet for even browning. For best results, serve warm from oven, or re-heat in the microwave prior to serving for a melty caramel core.
