Recipe: Oatmeal Cream Pies with Canna-Caramel Buttercream

Fall is right around the corner, and you may be reminiscing on your favorite back-to-school memories. Are the packaged snack foods you loved among your great lunchtime highlights? What if you could make a fresh, minimal-ingredient version at home, with the added bonus of a relaxing cannabis high?

If that sounds like your idea of a great time, then today’s recipe will be a great treat - Oatmeal Cream Pies, just like your childhood favorite! The chewy texture and spicy-nutty oatmeal flavor are sure to take you back to the cafeteria glory days. These decadent snack cookies are filled with a caramel buttercream frosting, infused with our Relax 50mg THC cannabis caramel variety (available at retailers across Oregon), made with Oregon Roots Purple Widow strain-specific Canna-Butter and Myrcene and Linalool terpenes, for a relaxing marijuana edible treat - perfect for stay-at-home “weed moms” or dads sending the kids off to school with their own oatmeal cream pies! This recipe will make 12 sandwich cookies with a THC dose of about 8mg each, so you can eat several cookies if you have a moderate-to-high tolerance to edibles, or you can start with half a cookie as a perfect dose for first-timers. Ingredients

For Cookies
1/2 cup salted butter, softened
1/4 + 1/8 cup granulated sugar
1/4 + 1/8 cup light brown sugar, firmly packed
1 large egg
1 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp cinnamon
1-1/2 cup rolled oats, uncooked
1/2 cup finely chopped toasted pecans

For Salted Caramel Buttercream Frosting
8 caramel candies, unwrapped
1-1/2 to 2 tbsp heavy cream, divided
1/4 cup salted butter, softened
1-1/2 oz cream cheese, softened
1 tsp vanilla extract
1/4 tsp salt
8 oz powdered sugar

Directions

  1. Pre-heat oven to 350 degrees F. In the bowl of a stand mixer, combine both sugars with the softened butter until smooth, about 2 minutes. Add the egg and vanilla and beat until just combined.

  2. In a separate bowl, combine the flour, baking soda, salt, and cinnamon. In small additions, add to the butter mixture and stir on low until incorporated between additions. Manually stir in oats and pecans until dough pulls together.

  3. Drop even spoonfuls of dough onto a parchment paper-lined baking sheets about 3 inches apart - cookies will spread out thin, so be sure to leave adequate space. Bake in preheated oven until evenly golden brown but still soft in the center for a chewy final cookie, about 9-11 minutes. Cool 5 minutes on baking sheet before transferring to wire cooling racks to cool completely, at least 1 hour.

  4. While cookies cool, prepare the salted caramel buttercream frosting. In the microwave or over a gentle double-boiler, heat the caramel candies (both regular and Periodic cannabis caramels) with 1 tbsp of heavy cream, stirring frequently to incorporate all ingredients completely. Once melted, add an additional 1/2 tbsp of heavy cream to caramel sauce off of heat and stir. Set aside to cool completely, about 30 minutes. In the bowl of a stand mixer, combine salted butter and cream cheese, beating on medium speed until smooth. Add vanilla extract and salt, stirring to combine. Gradually add about 8 oz of powdered sugar and all of the caramel sauce to the mixer in alternating additions, stopping to scrape the bowl down frequently to combine all ingredients evenly and smoothly. If necessary, add additional teaspoons of powdered sugar to thicken the icing, or heavy cream to thin it, one at a time until your desired consistency is reached. You should be aiming for soft peaks (as pictured above) that aren’t too thick or stiff, as the icing will continue to firm and thicken as the cookies set.

  5. Once the cookies are completely cooled and caramel buttercream is prepared, pipe or spoon about 1-1/2 tbsp of icing into the center of one cookie. Smash a similarly-sized cookie down in a twisting motion to press the icing out evenly across the surface of each cookie sandwich. Repeat until all cookies are used and 12 sandwich cookies are prepared. If needed, store in fridge for 20-30 minutes to firm icing before serving.
