Recipe: Canna-Caramel Peanut Bars
What if you could get the nougat and chocolate goodness of Snickers mixed with the caramel and peanut delight of a Pay Day, all in one candy bar? Well now you can, if you just make this recipe! These salty-sweet Canna-Caramel Peanut Bars are made with just a few ingredients, the recipe requires no baking, the bars pack a good amount of protein thanks to the hearty peanut layer, and the sweet caramel touch adds some cannabis goodness through the inclusion of our Balance cannabis caramel variety! (available at retailers across Oregon), We make these caramels with Dog Walker strain-specific Canna-Butter and Limonene and Terpinolene terpenes, perfect for a little self-indulgence any time of day!
This recipe will make about 24 bars with an approximate THC dose of about 4mg each (if two Periodic caramels are used). Use 3 caramels if you’d like your dose in the 6mg per bar range, or you could even substitute the shortening for some canna-butter to up the dose as well. When in doubt, as with all edibles, start low and go slow on consuming to avoid accidental overconsumption, and if you do find yourself feeling the effects of a THC overconsumption, use the tactics in our recent blog post to help yourself feel better.
3.5 oz (1/2 jar) marshmallow crème
1-3/4 to 2 cups powdered sugar
7 oz (1/2 package) caramel candies
2-3 Periodic edibles Balance Cannabis Caramels
1 tbsp water
2 cups salted peanuts, rough chopped
1 cup semisweet chocolate chips
1 tsp shortening
Line a large baking sheet with parchment paper dusted with powdered sugar. In a large mixing bowl, combine the marshmallow crème and 1 cup of powdered sugar. Scrap the sides of the bowl and gradually knead in the remaining powdered sugar in 1/4 cup additions with a spatula until the mixture is easy to handle and smooth.
Divide the mixture into 2 portions and pull them out into even 1/2 inch logs. Cut the logs into 1 to 1-1/2 inch pieces and freeze until firm, about 15-30 minutes.
While the nougat logs freeze, place the peanuts in a large mixing bowl for coating. Over a gentle double-boiler, melt the non-infused caramel candies until liquid before adding the Periodic edibles cannabis caramels. Thoroughly mix the caramel to evenly distribute the cannabis compounds throughout the entire caramel mixture. Set aside to cool slightly until the nougat logs are firm. Keep your double-boiler going in case you need to re-melt the caramel during the coating process.
Once the nougat logs are ready, remove 4-6 at a time from the freezer while the rest continue to chill. Working quickly, dip the nougat log into the caramel sauce and then transfer to the peanut bowl to thoroughly coat the caramel layer in peanuts. Coat until all the caramel is covered and you can handle the bar without getting too sticky. Return the coated bars to the freezer to set, and repeat with the remaining nougat logs until all are coated. Freeze the coated bars at least 1 hour to completely adhere the peanuts.
While the bars set, melt your chocolate chips over the same double-boiler used before and add the shortening. Mix and set aside to cool slightly before dunking the bottom of each bar into the chocolate. Be sure to slightly tip the bars while dunking to get some chocolate coverage on the sides of the bars. Freeze the bars again, about 30 minute to one hour, until the chocolate is set. Once set, bars can be stored in an airtight container at room temperature.
